So, in present times we might find ourselves in a position of not having a full and varied stock of food. Maybe because of low stocks in the super market, being isolated with limited access to supplies or the shopping budget is suddenly tighter.
There are things we can do to get the most out of the food we do have. The way we store and prep food has an impact on it's vitamin content. The micronutrients can leach out in water, decrease in sunlight and be affected by handling.
Here are some tips on how to keep the vitamin and mineral content of vegetables high so that we get the most out of them.
🥦 Steaming veg keeps more vitamins in them than boiling them, you can then use any left over water in gravy so you consume any leached vitamins.
🥦 Cooking veg in stews, casseroles or baked dishes also means you still eat any lost vitamins.
🥦 Keep veg in your fridge and only prep them as you need them.
🥦 Buy local, as transporting and handling can lower vitamin content.
🥦 Try to choose seasonal veg as this naturally already has a higher micronutrient content than veg grown out of season.
🥦 If you cook too much, freeze them as soon as they've cooled for use another day. A good way of avoiding waste too.
